If Parse provides her +1 bonus to Fanatic and she uses her base per is that 2/1 or 2/2? I remember seeing an answer to this kind of question before but cannot find it.

Also, if she gives the bonus to K.N.Y.F.E. who then plays the card that lasts her do 1/1 to up to three targets does that end up being 2/2 x3, 2/1 x3, 2/2 then 1/1 x2, or 2/1 then 1/1x2? I know it doesn't last to a second card/power but wonder how far it got on a single one.

It’s the last one. It’s just the next instance of damage not the next set of damage

Yeah, it works just like Haka of Battle and Taiaha.  Only the very first actual strike gets the damage.  Also note that Critical Multiplier's bonus is not optional, so if Parse is last in the turn order and your villain is going to cause heroes to damage themselves, you should avoid playing it (or at least avoid discarding cards as much as possible).
