Is there a preferred game-tracking spreadsheet/card randomizer, or do you usually just play using physical deck(s) like in a live game?

I can't speak for others, but I just use the physical deck

 

I've done both, either using a physical deck (arranging the facing to keep track of hand vs discard, etc), or keeping a text file that I randomize.

Naturalist's initial hand: Crafty Assault, Cornered Beast, Indomitable Force (x2). I'll probably start by tanking with Rhinocerous/Indomitable Force.

Adept's opening hand: Arcanae Cadence, Inventive Preparation(x2), Vernal Sonata

Almost certainly going to start with a Cadence, especially if Nightmist's playing Mistbound and won't be helped by showing her the top of her deck with Inventive Prep.

OK, then I'll search my deck for The Deadly Crocodile and put it into play, unless someone else has a better move. I'll be able to do 6 damage on my turn.

Just be careful with those teeth around my instruments; they're kinda rare.
